How I Take Care of Myself

I feel at my best mentally when I take the time to take care of my body as well as my mind. These two are very much connected, and I’ve always been able to tell a significant difference in how I feel mentally when I workout regularly and when I don’t.

My workout routines have come and gone a bit over the last year. I had a really good summer/fall last year, got my heart broken in November, fell out of it all (as one often do), got back on track again this spring, and then I’ve been a bit back and forth. I started to get back on track with the good routines again a few weeks before I went on my summer vacation, and while I’ve been away, I’ve slowly, but surely been finding my way back into a good routine when it comes to both what I do with my body and my mind, as well as what I put into my body.

A lot of people have the misconception about veganism as a form of lifestyle that just automatically makes you eat only healthy food. Yes, I eat a lot of greens, but there is plenty of unhealthy vegan food as well. Let’s just mention Orio’s and Ben & Jerry’s. I’m not saying I don’t enjoy those things, because I do, but in moderation.

So now that I’m getting into a good routine, what does that mean for me?

Yoga

I love yoga. Not just for the physical results it gives me, but for how it makes me feel. The focus on breathing and getting rid of the tension in the muscles is amazing. When I actively do yoga, I manage stress so much better. I take the time to check in with my body more often, and I’m a better listener whenever my body tries to tell me something.

You can do yoga pretty much anywhere and without any equipment. A mat is nice to have, but definitely not a must. You can easily use a towel or just soft grass.

And if you need a little bit of guidance, then I would recommend YouTube. When I need a little bit of a push and guidance back into yoga, I always turn to Yoga with Adrienne. She’s amazing, and I love how easy her guided yoga sessions are to keep up with.

Meditation

When it comes to coping with stress, meditation is also a great way to train oneself to handle it better. I usually do a meditation session in the morning before I get out of bed. It’s a great way to start the day and to set your focus for the day.

If you feel like you could use some guidance through your meditations, there are numerous videos on YouTube and apps for both Android and iPhone. One of my favorites is Headspace. Headspace is a great way to start getting into meditation, and you can choose the length of the session so it fits the time that you have available.

Run and walk

I’m finally getting back into running, which is something that I love to do when I just get into the routine of it. It’s such an amazing feeling to just turn the music on and run. I prefer to run in the forest. It’s easier on the body than running on asphalt, and I love being so close to nature.

Another great way to just stay active is to walk. I often choose to walk instead of using public transportation if I can. It’s a great walk to workout without even feeling like that’s what you’re doing. And with a good audiobook or some great music, it’s even better!

Take Time Off

This is something that I’m not always really good at. I tend to get lost in all of my projects and I will work and work until I’m on the edge of getting burned out. After getting completely burned out a couple of times though, I’ve learned to listen to my body more, and I prioritize taking much needed time off. I disconnect from social media, I read, I spend time with people that I love and I devour art as a way to recharge. And sleep, don’t forget to sleep and get your rest! It’s so important for your body and your mind!

And the last, but maybe the most important things that I do to take care of myself is to LOVE, to practice GRATITUDE, and to LAUGH!

Vegan in Amsterdam

Being a vegan when traveling can from time to time be a bit challenging, so it’s always interesting to travel to a new city and explore their vegan options.

When I was planning my Amsterdam trip, I had already done quite a lot of research around vegan places I would like to try out. Unfortunately, I didn’t get to all of them, but the ones that I tried was absolutely amazing!

Juice by Nature

On my very first day in Amsterdam, while wandering around in the city, I stumbled across this place. I almost walked right past it actually, but I’m glad that the sign on the other side of the road grabbed my attention.

It’s not a big café, but it has a really calm and nice vibe to it. The staff that worked there made me feel very welcomed and at home.

I ordered a hummus wrap, black coffee, and a carrot cake, then I found myself a table and enjoyed the hell out of it! Up until that point, I had eaten the vegan options from Starbucks and local stores, which were surprisingly good (kudos to Dutch Starbucks for serving vegan food options), so it was to sit down somewhere quiet and have a proper meal.

The hummus wrap was good, but it could’ve been a bit more spiced up. But the carrot cake was divine! A vegan, no bake, no sugar cake that just melted in my mouth! Holy moly was that a wonderful experience!

I left the place feeling very satisfied and happy, and I went back several times for juice/smoothies (which were amazing!) and salads.

A really good spot for a lunch or a snack. They did have soups and other hot dishes too, but I did not have time to try them out. Next time!

VEGABOND

When I came across Vegabond while doing my research, I knew that I had to visit the place! First off, it looks super cozy! Second, VEGAN DONUTS!

I had been craving donuts for weeks but did not have the time to go in search of them here in Oslo, so Amsterdam was donut time!

Vegabond is located in a quiet area, with a view of one of the many canals. It’s quite small though, so don’t go there and expect to get a very private table. But I loved that part too. It was a great way to meet new people and easily interact with fellow vegans.

Vegabond is not just a café, it’s a shop too. You can buy lots and lots of vegan products like snacks, food prep ingredients, sodas and more.

I was met by a kind, smiling and welcoming staff that had plenty of recommendations for food and cake options.

So let’s talk about the donuts! It was well worth the wait! I think it’s actually the best donut I’ve ever had, and that’s not even an exaggeration. When vegan donuts taste that good, and they’re sprinkled with good conscience, why would one ever opt for having any other kind??

The first day I was there I had a wrap, the second day I went there we tried a “mozzarella” sandwich, “brie” sandwich, spinach pastries and several cakes, plus snacks, coffees, and sodas.

Their vegan mozzarella and brie tasted so like the real thing that if I didn’t know that everything they serve is vegan, I would’ve thought that it wasn’t! Amazing!

It’s fair to say that we stuffed our faces and had absolutely NO regrets!

I got to enjoy the view from the table at the window both times, and I got to meet and talk to some really amazing people while I was there. It’s a great place to go as a solo traveler, or to enjoy food/desserts that will make your taste buds have a proper party! And don’t leave the place without having tried the donuts! You can thank me later!

Vegabond is definitely my favorite vegan spot in Amsterdam, and I can’t wait to go back there for my next visit!

I found Amsterdam to be a city where it was easy to be a satisfied and happy vegan traveler! As long as you do a little bit of research, then there are quite a few places that are completely vegan, or at least has vegan options on the menu.

I also found that being a vegan on the go was quite easy too. Most of their food markets/retail stores had a good variety of vegan options and every single one that I tried was tasty.

I already miss all of the wonderful food and the vibe, and I can’t wait for my next trip there❤️

Best Vegan Enchiladas in Oslo?

As a vegan I often get asked where I like to go out to eat in Oslo, and if I had to choose just one place to recommend it would be nordvegan!

Wonderful atmosphere, desserts to die for, interesting sodas and maybe Oslo’s best enchiladas!

And best of all; IT’S ALL VEGAN!

Their food options change everyday, so there’s always something a bit different or new to try. The kitchen was trained by the award-winning chef Reuben Waller (who used to work at Michelin-starred restaurants), and is now run by Fabio Baudo (also has a background from Michelin-starred restaurants).

Nordvegan has become a favorite spot for lunch with the girls or just to take myself out on a date ❤️

I can highly recommend the Buddha bowl, lasagne and (of course) the ENCHILADAS! Yummy!!!

EAT IT, LOVE IT AND ENJOY IT WITH A GOOD CONSCIENCE❤️

A lifestyle change!

Those of you who follow me on Instagram already know about this huge change that I made to my life, a little over a week ago. It’s something that has been on my mind for quite some time, but to commit to eat felt kind of scary and overwhelming. I just didn’t have the motivational drive to start. And when it comes to complete lifestyle changes, motivation and dedication is key!

So what is this big change you ask? Drumroll please!!

I’ve gone VEGAN!

I think the decision to go vegan was made up by many little things. I’ve been tempted for so long to make the change, but I just had no idea where to start. But then I watched a video clip (a friend of mine shared it on Facebook) of a cow about to be slaughtered by a gunshot through the head, and the cow was franticly trying to avoid the little red aiming light. That’s when something just clicked inside of me, and I just decided that it was time to make a difference.

And you might think that it doesn’t make that much of a difference in the big picture of thing! But the big picture is composed by all of us individuals and the choices we make. And guess what! A vegan lifestyle of one person, saves one animal. EVERY DAY! That adds up to a whole lot of them over the years. And it’s not only about saving animal lives (even though that’s hugely important), it’s about our planet (pollution, saving the rainforest etc) and it’s also about my own health.

When you start to really look at the food labels, it’s cringeworthy to see what it is we’re putting inside of us on a daily basis. No wonder we’re getting sicker and fatter. It’s time to take care of this body. It’s the only one I’ll ever have!
